Im looking to get wheels with these offset and want to run 265-30's and 295-30's.
Will this work and will I need to cut the rear fenders?

You will need to trim/pull the fenders in the rear for sure, with the screw/tab removed up front I think you should be okay

Would I be better off running a 285/30? maybe even a 295/25

I personally wont run anything less than a 30 series tire.. roll/cut rears for an 11" with your offset
