I know it means the overflow tank is low. It isn’t. I know I have to clean the gunk buildup. I did. The only way to make it go is to unplug the sensor lol, any ideas? Or should I just give up and buy a new (used) one

Look up the sensor resistance specs in the online TSRM, and measure the sensor to diagnose if it's bad or not.

It's supposed to float. Make sure you have movement down there and that it's not stuck. I suppose one way to test it with an ohmmeter would be that when it's empty you would have continuity at the plug and when you turn it upside down it should be an open circuit.
