I have a chance to get a pretty nice MK2 locally, here is the FS thread: http://supraforums.com/forum/showthread.php?t=365460

I was thinking about selling my car, then using that money to fix the problems and drop in a 7M-GTE, what do you guys think? I love MK2's, I'd plan on painting the whole car a new color, and get everything it needs. What could I expect difficulty wise doing the swap? And would I need to fabricate anything transmission or differential wise?

I'm being perfectly honest when I say that you probably don't have the skills to do a successful 7m swap into a Mk2. I'm not trying to be rude, but I know an individual who basically did 7m-mk2 swaps for a living and it was very labor intensive even for him. Dropping in the motor and transmission is the easy part, then there's the intercooler piping, exhaust, wiring, gauge cluster work, etc. It's not as cut and dry as you may think. Not to mention the fact that you probably won't get what you want for your car.
