Probably has something to do with what kind of oil as well.. I have a 10W right now and mine is usually at about 25 on throttle..then again I have a BHG. :)

I use 10w-30 durablend and i get good oil pressure...at least from what i know, its good.

start up, goes to about 45....after warmup, on idle..anywhere from 5-10 on full throttle/highway around 37-40.

If oil weight makes a difference then I probably shouldn't be worried. Just doing break-in after rebuilding a GTE. Its got 10w30 in it now and it sits at 20 on throttle once the car has warmed up.

On the other hand maybe I'm still wrong.

If you just rebuilt the motor, I'd bet your sending unit or gauge might be faulty. Try getting a reading with a gauge other than the stock one.
If it really is low, try shimming the bypass spring with a washer or two. (Extra oil pressure to the motor, not the cooler is a good idea. Your cooler will see plenty of oil when your running down the road, and it actually will have enough air flow to cool it before dumping it back into the pan.)
