Steve, I am looking at a new set of JDM wheels for the Supra. The wheels are available in an 18X10 +47mm rear, so I know a P275 will be okay. However, my question concerns the front wheels...

They are listed as:

18X9.0 +47mm, low disk
and
18X9.0 +42mm, medium disk
and
18X9.0 +41mm, high disk (good for my P245)

Which do I choose? Is this a bad English translation of "dish", or by "disk" do they mean caliper clearance? Thanks, bro.

The different disk styles will determine if they will clear your caliper. I think you will need to go with the high disk. With this offset you will be able to run a 255/35R18 front and you could run a 285/30R18 rear.
