OK I replaced my taillight gasket and it still leaked after installing it, and I just installed a new hatch weatherstrip and bumpstops, and my trunk is STILL filling up with water! What am I missing here?

It might be leaking through where your spoiler mounts to the hatch.
OMG that makes perfect sense! That's why when I raise the hatch after rain, water comes out of the trim! Now... how to fix?

Rear window wiper seal. Check it for leaks...

Also, peel off all the interior pieces in the rear, lay on your back in the hatch, and get someone to spray the snot out of the rear with a hose while you peer around with a flashlight. Anything that leaks a gallon in less than a week shold be easy to spot. :)
