If I was loaded with money, I'd replace everything with new parts, but I'm not. So I need to prioritize. Since I'm getting the engine rebuilt, I figure I'd replace some other parts while I have the engine out.

So far, I will be installing a new clutch, water pump, belts, spark plugs/wires. Anything else you guys recommend replacing while I have motor out?

a bunch of the stuff on your list can be done with the motor in... ;)

gaskets, belts and pulleys/tensioners, vac lines, both radiator hoses

Within a year of having my car the alternator and PS pump went out. Every part in your engine is rated to a certain age/mileage and with cars 20+ years old anything could go any day... Something to think about.

Motor is already getting rebuilt with a metal head gasket and arp head studs. What I meant to ask is what else should I replace while I have the motor out for a rebuild.

Looks like I will add coolant hoses and vacuum lines to the list.

upgrade your knock sensor wires while the engine is out
new oil pump wouldnt be a bad idea
trans output shaft seal...make sure to clean drive shaft yoke with fine grit sand paper and soak the sand paper in atf before sanding
honestly while its apart i would replace every gasket that i could so i didnt have to do it later like intake gaskets, tb gasket and pretty much all of them lol
timing belt should be replaced and possibly the belt tensioner if its a little worn out
