It sounds like he is asking about the optimum surface finish on a milled head. Too smooth is not necessarily better for a gasket surface but I have no experience to say what is optimum. As far as flatness, that spec is in the FSM "engine repair" section and I don't know of any reason to deviate from that. I agree with the point above, that the OEM head gasket has been used for high boost/high power applications without problems.
